Bentley House Pork Chops w/ Apples and Bourbon

4 Boneless loin pork chops
1 Garlic clove, halved lengthwise
Pinch of sage, salt and fresh ground pepper
2 Tbs. unsalted butter
1 Tsp. fresh lemon juice
1/2 Cup choppped onion

1 Med. Granny Smith apple, peeled and diced
1/3 Cup bourbon

Rub both sides of chops with cut sides of grlic cloves. Season with sage, salt and pepper. In a large skillet, heat butter until it sizzles. Add chops and saute (moderate heat) until browned on bottom (6 min.). Turn chops, saute another 6 minutes. Remove meat and sprinkle with lemon juice and keep warm. Add the onion (and more butter if needed) to the skillet and saute over moderate heat until fragrant; about 1 minute. Add apples and saute until warm (1-2 min). Spoon the onion, apple and bourbon sauce over the warm chops and serve at once. ENJOY!
