Harvest Moon Cookies

  • Preheat oven to 375 degrees
  • 2 Cups flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon salt
  • 1 Cup butter
  • 3/4 Cup sugar
  • 3/4 Cup packed brown sugar
  • 2 Eggs
  • 1 Teaspoon vanilla extract
  • 2 Cups uncooked oat flakes
  • 1/2 Cup chopped walnuts
  • 1 Cup dried sweet cranberries

DIRECTIONS:

Preheat oven to 375 degrees. Sift flour, salt and baking soda. Set aside. Beat butter, sugars, eggs and vanilla until light and fluffy. Stir in flour mixture and oats until well combined. Add walnuts and cranberries. Drop by rounded teaspoonfuls onto cookie sheet, 2 inches apart. Bake 10 to 12 minutes until golden brown. Let stand 1 minute before removing and cooling on a wire rack. Makes about 6 dozen.
