large baking apples
8 ounces of cream cheese - softened
1 egg
1/2 cup sugar
1 tsp. vanilla
sprinkle of cinnamon
Preheat oven to 350. Peel away about 1" of skin around
the top of each apple. Remove the core and scoop out some
of the pulp (a melon baller works great for this) leaving
at least 3/4" of apple. Mix the cream cheese, egg,
sugar and vanilla. Beat until smooth. Fill each apple and
place them in ramekins (you can use a muffin tin if you
don't have ramekins). Place the ramekins or tin in a baking
pan and add about 1/2" of water to the pan. Sprinkle
the tops of the apples with a little cinnamon. Bake at 350
for 30-45 minutes. Check for consistent softness around
apples. Serve immediately.
