Toasted Pecan Buttermilk Belgian Waffles

2 eggs, separated
1 1/2 cups buttermilk
1/2 stick unsalted butter, melted and slightly cooled
1/2 teaspoon vanilla extract
1 cup sifted all-purpose flour
2 t. baking powder
1 t. baking soda
1/2 cup lightly toasted, chopped pecans

Preheat Belgian waffle iron. Whisk egg yolks, buttermilk, melted butter and vanilla extract in a medium bowl. Thoroughly mix flour, baking powder, baking soda and chopped pecans. Add flour mixture to egg mixture and beat to combine waffle batter. Whip egg whites till they form soft peaks. Fold egg whites into the batter. Prepare waffles per the instructions for your waffle iron. Serve with maple syrup, fruit syrup or a fruit salsa. Serves 4.
