State Fair Blueberry Muffins

2 Eggs
1 Cup sugar
1 Cup Milk
1 Teaspoon baking soda
1/4 Cup shortening
2 1/2 Cups flour
2 Teaspoons cream of tartar
1/4 Teaspoon salt (optional)
1 1/2 Cups blueberries, rinsed and drained

Preheat oven to 375 degrees. Grease muffin cups. Cream shortening and sugar, add eggs and milk. Sift dry ingredients in separate bowl; add to creamed mixture just until moistened. Fold in blueberries. Bake at 375 degrees for 20-25 minutes. Makes 12-14 muffins.
