Irene’s Raisin Oatmeal Cookies

2-1/2 cups raisins
2 cups water
1-1/2 cups shortening
2-1/2 cups brown sugar, well packed
3 eggs, beaten
4 teaspoons vanilla

Lightly simmer raisins in water for 20 minutes (do not boil dry.) Add shortening and brown sugar to raisins and water.  Let cool to luke warm.  Add eggs and vanilla.  Mix well.

In a very large bowl sift the following:
4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons soda
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons closes
3 teaspoons instant coffee crystals
Add the raisin mixture to the flour mixture and mix well.
5 cups quick oatmeal and 1 cup shredded coconut.

Stir thoroughly. Drop by teaspoonfuls onto a foiled and well-greased cookie sheet.  Bake on third rack up from bottom of oven at 375 degrees for 8 to 10 minutes or until cookies turn light brown around bottom edges. Immediately remove cookies from pan and cool on pastry cloth. Makes about 90 soft cookies.
