Eastholme's Scones

In a food processor with a steel blade add the following:

5 C. regular white flour
1 C. granulated sugar
3 T. baking powder
1tsp. baking soda
2 sticks cold butter cut into pieces (1C)

Mix until all is combined and looks like cornmeal. (At this point it can be saved in a container in the refrigerator until ready to use in batches)

Take out 1 C. of mix for every 4 scones you need.
Mix in approximately 1/4 C buttermilk to make a dough that does not stick. (add more dry mix if too sticky)
Press flat to about 1/2" thick circle. Cut crosswise twice with a sharp knife to make 4 wedges.
Bake at 400 degrees approx. 12 minutes until lightly browned.

Optional: can add currants or raisins to dry mix for variation.
