Lake Clark Broccoli Salad


  • 1 Small head of broccoli (fresh from the garden)
  • 1 Small head of Chinese cabbage
  • 8 Strips of crispy fried bacon
  • 3 Green onions chopped - including tops
  • 1 1/2 Cups of grated cheddar cheese
  • 1/2 Cup of mayonnaise
  • 2 to 3 Tablespoons of white sugar
  • 1 Tablespoon of white vinegar

Chop tops of broccoli - don't use too much stalk. Chop cabbage to small bite-size pieces. Add chopped onions, crumbled bacon and cheese. Thoroughly mix dressing with sugar and vinegar. Add to salad mixture and toss until coated. Chill well and serve. You may add toasted sunflower kernels if you have them...Serves 8 -10.
