Orinda Quiche

1/2 to 3/4 cup red salsa
crushed tortilla chips
1/2 cup mushrooms
1/2 cup chopped tomatoes
1/4 - 1/2 cup chopped red onion
4 eggs
1/2 cup milk
1 cup cheddar cheese
sprinkle of Cilantro

Spray 9” pie plate with Pam. Put in red salsa, just enough to cover bottom. Cover with crushed tortilla chips. Sprinkle mushroom slices, chopped tomatoes and red onion on top. Beat eggs and milk, then pour over top. Cover with grated Cheddar cheese and a sprinkle of Cilantro. Bake at 350 degrees for 30 minutes until lightly browned. Serve wedges with a topping of sour cream and more salsa (optional - top with toasted pinon nuts).
