Blueberry Muffins

Ingredients:

Step 1

  • 6 Tbsp butter, softened
  • 1/2 Cup sugar
  • 2 Eggs
  • 1 Cup buttermilk
  • 2 Tsp vanilla

Cream butter and sugar until light and fluffy. Add eggs, buttermilk, and vanilla. Lightly beat until blended.

Step 2

  • 1 Cup white flour
  • 1/2 Cup oat flour
  • 3/4 Cup whole wheat flour
  • 1/2 Tsp salt
  • 1 Tsp baking soda
  • 2 Tsp baking powder
  • 1/2 Tsp nutmeg

Sift or wisk together in seperate bowl. Then add dry mixture to liquid and stir until flour disappears.

Step 3

  • 1 1/2 Cups blueberries, fresh or frozen

Gently stir berries into batter and fill muffin cups to the top.

Baking step:

Bake 20 minutes. Let cool 5 minutes. Remove from muffin tin and cool on baking rack.
