Ginger Bread
Pancakes
1 cp wheat flour
1 cup white flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
2 tbsp brown sugar
mix all dry ingredients together.
1/2 cup molasses
2 eggs-separated
3 tbsp butter, melted
1 cup milk
Mix all wet ingredients
together-EXCEPT egg whites gently fold wet and dry together
whip egg whites until stiff, then gently fold half of the
whipped whites into pancake mix. Once incorporated, gently
fold remaining whites into mix.
Batter will be thick, but airy.
Scoop batter onto greased griddle, patting down a litle to
form pancake. Cook until golden brown. Serve with
whipped cream and New Hampshire Maple Syrup.
