Banana Chocolate Chip Muffins



  • 2 Cups All purpose flour
  • 1/2 Cup sugar
  • 2 Tsp. baking powder
  • 1/2 Tsp. salt
  • 1 Cup milk
  • 1/4 Cup vegetable oil
  • 1 Egg (beaten)
  • 2 Tsp. Vanilla
  • 1/2 Cup mini chocolate chips
  • 2 Fully ripe bananas, mashed

Preheat oven to 400 degrees. Lightly grease a 12 cup muffin pan. In a large bowl, mix together first 4 ingredients and make a "well" in the center. In a separate bowl mix together next 4 ingredients. Add liquid ingredients to dry ingredients and mix only until dry ingredients are incorporated. Do not over mix or the muffins will become tough. Fold in the chocolate chips and mashed bananas. Fill muffin cups 3/4 full and bake for 18-20 minutes until golden brown. Remove from pan immediately and cool on a wire rack.
