Breakfast Enchilada

Burrito size Flour tortillas, cut into small pieces
1 Cup of Ham
2 Cups grated cheese (Cheddar & Monterey Jack)
1 Zucchini, diced
10 Eggs, beaten
3 Cups prepared green Chile sauce ( 505 medium Chile sauce)
Salt & Pepper to taste
13 X 9 by 2" pan.
Spray with nonstick coating.
Line bottom of pan with tortilla pieces.
More tortillas can be used if desired.
Layer ham, cheese & zucchini.
Beat eggs and add green chili sauce to egg mixture.
Pour over other ingredients in pan.
Top with Chedder & Monterey Jack Cheese.
Let stand overnight in refrigerator.
Bake at 375 degrees fahrenheit for 45 minutes
and /or until top is browned & puffy
