Eggs Callahan

6-8 ounce package frozen shredded hash browns, thawed
1/2 cup butter (or a little less)
2 cups shredded cheddar cheese
1/2 pound Italian sausage (cooked)
2 cups mushrooms, diced
1 cup yellow peppers
1 cup red peppers
5 eggs
1/2 cup milk

Seasoning to taste

Press thawed hash browns between paper towels to remove moisture. Spray quiche pan with Pam. Press hash browns into pan forming crust. Brush with butter and bake at 450 degrees for 30 minutes. Remove from oven, sprinkle with cheddar cheese. Add sausage, peppers and mushrooms. Beat together eggs with milk. Add seasoning to taste and pour over baking dish. Bake uncovered at 350 degrees for 30 -40 minutes. Slice and serve with sliced tomatoes, avocado and salsa on the side. Vegetarians may simple leave out the sausage.
