Puff Pancake with Peaches and Berry Compote
1 cup flour
1 cup milk
1 tablespoon sugar
oven to 350. Place pyrex 8x12 pan with 1 tablespoon butter
in oven while mixing batter. Bake in 8x12 pan with melted
butter for 20 min at 350. While puff is baking, slice 2 to
4 peaches depending on size. Sugar to taste. Set aside. In
a one quart sacuepan on low heat, place either 2 cups of blueberries
or 1 cup of blue berries and black berries. Add 1/2 cup sugar
(or to taste) mixed with 1 tablespoon cornstarch. Bring to
boil stirring frequently to prevent burning, remove from heat.
When puff is finished baking, slice into 4 to 6 servings and
top with fresh peaches and bludeberry compote. Serve immediately.
